Since our cherished time there, two years ago, I've made the egg and oatmeal dishes on several occasions. Sadly, I have not found a muffin recipe that sounded good and at least a little healthy. That is, until yesterday. I needed to bake something (it's kind of like an addiction for me...) and had time, so I

I, of course, tweaked it. Instead of using white flour, I used white whole wheat flour. I added ground flaxseed. I didn't use the crushed pineapple it called for. I was very excited to use so much of my favorite things in these muffins, though: carrots, apples, raisins, apple butter, cinnamon, coconut and pecans.
The muffins turned out great and Patrick can even eat them, since they're so healthy! (He gave up sweets for a month. argh. It's almost over though!) The recipe makes 24 and I was a little sad that I didn't double it. I shared a few with our friends and froze six of them. I'm looking forward to my snack this afternoon!
